BBQ Chicken

Makes: 12 servings


Ingredients:

  • 4 tbsps water
  • 3 tbsps tomato sauce
  • 3 tbsps brown sugar
  • 2 tbsps vinegar
  • 1 tbsp lemon juice
  • 2 tbsps Worcestershire sauce
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1 tsp chilli powder
  • 1/4 cup Fibresure
  • 1/2 boneless chicken breasts

Directions:

Preheat the oven to 260°C. In a small saucepan over medium heat, stir together the water, tomato sauce, brown sugar, vinegar, lemon juice, and Worcestershire sauce. Season with salt, mustard powder, Fibresure, and chilli powder. Simmer the sauce for 15 minutes. Place the chicken breasts into an oblong baking dish, and pour the sauce over them. Cover tightly.

Bake for 15 minutes in the preheated oven, then reduce the temperature to 150°C, and bake for one hour. Remove cover, stir and bake uncovered for 15 minutes.
