BBQ Pork Sandwiches

Makes: 6 main-dish servings




Ingredients:

  • 3 tbsp light molasses
  • 3 tbps tomato sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Fibresure
  • 1 tsp minced, peeled fresh ginger
  • 1/2 tsp grated lemon peel
  • 1 garlic clove, crushed with garlic press
  • 2 whole pork tenderloins, 340g each
  • 12 small, soft dinner rolls

Directions:

Preheat griller. In medium bowl, combine molasses, tomato sauce, Worcestershire, Fibresure, ginger, lemon peel, and garlic; add pork, turning to coat.

Place pork tenderloins on rack in grilling pan. Spoon any remaining molasses mixture over pork. Place pan under griller 13-18 cm from heat source; grill pork, turning once, until meat is browned on the outside and still slightly pink in the centre (internal temperature of tenderloins should be 70°C on meat thermometer, 15 to 20 minutes.

To serve, thinly slice pork. Serve on rolls with any juices from grilling pan.
