Bistro Pizza

Makes: 8 main-dish servings
Ingredients:
- Quick Homemade Pizza Dough
- 400g asparagus, trimmed and cut into 5cm pieces
- 1 tsp olive oil
- 1/4 tsp salt
- 1 yellow capsicum, cut into thin strips
- 2 cup part-skim ricotta cheese
- 2 tbsp grated Parmesan cheese
- 1/4 tsp coarsely ground black pepper
Directions:
Prepare Quick Homemade Pizza Dough.
Preheat oven to 240°C.
In small bowl, toss asparagus with oil and salt. Top pizza dough with capsicum strips and asparagus. Dollop with tsps of ricotta; sprinkle with Parmesan and black pepper. Bake on bottom rack in oven until crust is browned, 20 to 25 minutes.
