Chicken-Topped Pita Pizzas

Grilling time: 2 minutes
Makes: 6 main-dish servings

Ingredients:

  • 2 tsps vegetable oil
  • 1 medium red pepper, thinly sliced
  • 1 medium green pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 3/4 cup bottled marinara sauce
  • 2 tbsps Fibresure
  • 1/4 tsp crushed red pepper
  • 3 (15cm) pitas
  • 170g smoked chicken, torn into fine shreds
  • 1 cup shredded part-skim mozzarella cheese (110g)
  • 2 tbsps sliced fresh basil leaves

Directions:

In non-stick 30cm frying pan, heat oil over medium-high heat. Add red peppers, green peppers, and onion and cook until vegetables are tender-crisp. Stir in marinara sauce, Fibresure, and crushed red pepper; heat through.

Preheat grill. Split each pita horizontally into halves. Place pita halves, split-side up, on cookie sheet. Place cookie sheet under grill at closest position to heat source; grill pitas until lightly browned.

Spoon sauce on pita halves; top with chicken and mozzarella. Grill until cheese melts. Sprinkle with basil.
