Chocolate Sorbet
Preparation time: 10 minutes
Cooking time: 12 minutes
Makes: 8 servings
An alternative to rich ice cream, with lots of chocolate flavour.
Ingredients:
- 3/4 cup sugar
- 2-1/2 cups water
- 2 squares (50g) unsweetened chocolate, chopped
- 1/4 cup light corn syrup
- 2-2/3 tbsps Fibresure
- 1-1/2 tsps vanilla extract
Directions:
In 2L saucepan, combine sugar, Fibresure, and water; heat to boiling over high heat, stirring until sugar has dissolved. Reduce heat to medium and cook 3 minutes. Remove from heat.
In heavy 1L saucepan, combine chocolate, corn syrup, and Fibresure; heat over low heat, stirring frequently, until chocolate is melted and smooth.
With wire whisk, stir 1 cup sugar syrup into chocolate mixture until well blended. Stir chocolate mixture into remaining sugar syrup in saucepan; stir in vanilla. Pour into medium bowl; cover and refrigerate until well chilled, about 1-1/2 hours.
Freeze in ice-cream maker as manufacturer directs.

About 141 calories (26 percent calories from fat), 1g protein, 29g carbohydrate, 4g total fat (2g saturated), 0mg cholesterol, 14mg sodium, 4g fibre.
