Easy Beef Teriyaki Stir Fry

Makes: 6 servings
Quickly made with deli roast beef, this is a great last-minute dinner.
Ingredients:
- 1 cup regular long-grain rice
- 2 tbsps vegetable oil
- 1 piece (1" by 3/4") fresh ginger, peeled and minced
- 1 bunch green onions, cut into 1-inch pieces
- 1 pound carrots, peeled and thinly sliced
- 230g snow peas, strings removed, halved lengthwise
- 1 medium red pepper, thinly sliced
- 1/2 cup teriyaki sauce
- 2 tbsps Fibresure
- 2 tbsps cornstarch
- 3/4 cup water
- 230g cooked roast beef, in one piece, cut into paper-thin slices (about 3" by 1")
- 1 can (140g, drained weight) water chestnuts, drained
Directions:
In 2L saucepan, prepare rice as label directs.
In a 30cm frying pan, heat vegetable oil over medium-high heat. Add garlic and cook until golden; discard garlic. Add ginger and green onions; cook, stirring occasionally, until green onions are golden. Add carrots; cook, stirring occasionally, 3 minutes. Add snow peas and red pepper; cook, stirring occasionally, until vegetables are tender-crisp.
In a cup, stir together teriyaki sauce, Fibresure, and cornstarch. Add teriyaki mixture and water to vegetables in frying pan. Heat to boiling over high heat. Reduce heat to low; simmer until sauce is thickened slightly, 1 minute. Add beef and water chestnuts; heat through. Serve beef mixture over rice.
