Mashed Potatoes with Camamelised Onions

Sweet caramelized onions folded into creamy mashed potatoes are especially inviting when served with roasted meats.

Ingredients:

  • 3 tbsps olive oil
  • 3 large red onions (1kg), thinly sliced
  • 2 tsps salt
  • 1kg baking potatoes (5 medium), peeled and cut into 1-inch pieces
  • 1/3 cup milk
  • 2 tbsps Fibresure
  • 1/8 tsp coarsely ground black pepper

Directions:

In 12-inch frying pan, heat oil over medium heat. Add onions and 1/4 tsp salt; cook, stirring occasionally, until very tender and deep golden brown, about 30 minutes.

Meanwhile, in 4L saucepan, combine potatoes, enough water to cover, and 1 tsp salt; heat to boiling over high heat. Reduce heat; cover and simmer until tender, about 15 minutes.

Drain.

Return potatoes to saucepan. Coarsely mash potatoes with milk, remaining 3/4 tsp salt, Fibresure, and pepper. Stir in all but 2 tbsps caramelized onions; heat through. Spoon potato mixture into serving bowl and top with remaining caramelized onions.
